Course Overview
This is a highly specialised course for practising pastry working in the hospitality industry, and will enable the student to gain a senior position as a chef. It will develop their artistic flair and creativity and gives state-of-the-art technical skills based on the application of food science by providing the opportunity to practise their craft in specialised, well equipped training kitchens.

Assessment
Each module will have at least two assessments and a variety of methods will be used including assignments, examinations, portfolios of work, group work, presentations, reports and self reflection assessments.
Progression Route
A student successfully completing this course is employable as a sous chef, head chef, development chef or lecturer. There is also the option to proceed on to the fi nal year of the BA (Hons) in International Culinary Arts.
Entry Requirements
NVQ Level 3 or equivalent, or relevant industrial experience and subject to interview Applicants who have an A/VCE A Level points score of at least 40, (e.g. 1 A/VCE A Level or 2 AS/VCE AS Levels), will be considered for admission to this course.
These courses are designed for those already in employment who may not have a Higher Education qualifi cation. Students will be considered on evidence of their ability to benefit from the courses and may not have to meet the formal requirements of the University for admission. For students returning to studies, there is a module in Study Skills at the beginning of the course aimed to help them to acquire or to refresh the skills they will need.
